How to prepare Fish Curry

Ingredients:

250 gms fish washed
1 cup coriander leaves chopped
 
2 tomatoes finely chopped
8 cloves garlic
2 green chillies chopped
 
1 tsp methi seeds
 
1 tsp coriander powder
 
A pinch turmeric powder
 
Salt To Taste
 
oil as required.

How to make fish curry:
·     Store the fish in salt and turmeric powder for 15 minutes.
·     Thin fry the fish pieces, drain and keep aside.
·     Crush the coriander leaves, garlic and green chillies.
·     Heat oil, add masala paste and fry till the oil separates out.
·     Add tomatoes, methi seeds and powder masalas and fry till the oil begins to float on top.
·     Add about 1 cup water. Bring the gravy to a boil.
·     Add the fish slices and cook for 10 minutes.
·     Fish curry is ready.



How to prepare Chicken Biryani


Required Ingredients:
Chicken - 1 kg
Curd - 2 cups
Onions – 2 (తరిగిన) 
Chillies - 10 తరిగిన
Chilli powder (కారం) - 1 tablespoon
Dhaniya powder (ధనియా పౌడర్)- 1 tablespoon
Mint  (పుదీనా)- 1 cup

Coriander (కొతిమిర) - 1 cup

Turmeric  (పసుపు)- 2 tablespoons

Cinnamon (దాల్చిన చెక్క ) - 1 
Cardamom (ఏలకుల )- 2

Pepper  (మిరియము)- 5

Bay leaves (బే ఆకులు)- 4
Oil
Prepare Biryani Rice
Basmati rice - 3 cups
Water - 5 cups
Oil - 2 tablespoons
ఏలకుల 
Process
Ø  Mix the rice and water in a bowl. Add oil and  ఏలకుల and cook till rice is half cooked. Drain the rice and keep aside.
Ø  Mix chicken with curd, chillies, turmeric, dhaniya powder, chilli powder, pepper, mint, coriander for 20 mts.
Ø  Add oil in a pan. Add bay leaves, cinnamon, cardamom, anise and fry for 2 mts.
Ø  Fry the తరిగిన onions till they turn brown.
Ø  Add the marinated chicken and spread evenly.
Ø  Add the cooked rice on the top of the chicken.
Ø  Cover the lid with a cloth and place on the top of the pan.
Ø  Cook for 20 mts under medium flame and delicious chicken biryani is ready.
